The amount of acrylamide that has been deemed safe for human consumption in drinking water is 0.12 micrograms in an 8-ounce glass of water or 0.5 parts per billion (ppb). When the FDA checked acrylamide content in some of the most common food products, the levels were surprisingly high. Pringles Original Potato Chips had 693 ppb, and Pringles Sweet Mesquite BBQ Flavored Potato Crisps had up to 2510 ppb!

Potato chips companies promised to reduce the acrylamide content in their products. This is easier said than done. According to the EU project, known as Heat-Generated Food Toxicants (HEATOX), you cannot simply eliminate acrylamide. If you heat food at high temperatures, the levels of acrylamide can be reduced by 40% at the most when using all the known methods.

Acrylamide can cause Cancer.

Since 2002, there has been many research and tests done about carcinogens. Dozens of them are focused on the other part of studies, which it to answer the question “Will you have higher risk of cancer, if you eat more of these foods?”. International Agency for Research on cancer has labeled acrylamide as carcinogen and has connected the high possibility of breast cancer, and ovarian cancer. This substance can also be the possible cause of nerve damage and neurological conditions. More research is being done today to find out more on what other possible effects can it bring.

How to Avoid Acrylamide?

There are very little ways of regulation in effect that can monitor the intake of chemical in our food. However, the US Environmental Toxicology Program and the Food and Drug administration has stated that by drinking lots of water is one way to go. They have also advised to make it a habit to have a healthy diet like fruits, vegetables, lean meat, poultry, fish eggs and nuts. Acrylamide can both be located in home cooked food and processed foods. The level of this substance can vary depending on the way you cook, the length of cooking, the manufacturer, and even the temperature of your cooking process. If ever your plan to cook something that has starch on it, the best way to cook them would be to boil them or by steam. Frying can cause the highest acrylamide formation. The quicker you cook it, the safer it will remain. Nutritionists recommend that we soak the potatoes 15 to 30 minutes before cooking to maintain and protect the nutrients.

Though I know we like potato chips so much, we should at least be aware of what we are eating, right? Some people still insist that Pringles are still healthy due to the fact that it has vegetable content on it. Maybe so, but having vegetable and cancer together is still not a good way to go. Stay healthy and live long.
