4 corn tortillas
1/4 c. Country Crock Original
1 large yellow onion, finely chopped

2 tbsp. chili powder
1 tbsp. cumin
1/2 tsp. cayenne pepper
kosher salt
Freshly ground black pepper
1 28-oz. can whole tomatoes
1 15-oz. can pinto beans, drained and rinsed
1 15-oz. can black beans, drained and rinsed
1 15-oz. can kidney beans, drained and rinsed
1/2 c. freshly chopped cilantro, plus more for serving
1/4 c. sour cream
1/4 c. shredded Cheddar
DIRECTIONS
Preheat oven to 400°. Place tortillas on a baking sheet and brush all over with Country Crock Original. Bake until golden and crispy, flipping halfway through, about 6 minutes, then season with salt. Once cool, break each into pieces.
Heat remaining 3 tablespoons Country Crock Original in pot over medium-high heat, and cook onion and peppers until soft, 5 minutes. Add garlic, chili powder, cumin, and cayenne and cook 2 minutes more, stirring well to combine. Season with salt and pepper, then add tomatoes and juices, crushing tomatoes gently with a wooden spoon.
Add beans to pot along with 2 1/2 cups water. Season with salt and pepper and bring to a boil. Reduce heat and simmer until thickened, 15 to 20 minutes, then stir in cilantro.

INGREDIENTS
FOR THE MEATBALLS
1 lb. ground chicken
1/2 c. panko bread crumbs
1/4 c. chopped chives, divided
2 cloves garlic, minced
1 egg
Kosher salt
Pinch cayenne pepper
1 tbsp. vegetable oil, for frying
FOR SAUCE
1/2 c. hot sauce (such as Frank’s)
1/4 c. lightly packed brown sugar
2 tbsp. apple cider vinegar

Red pepper flakes
DIRECTIONS
Form meatballs: In a large bowl, mix together ground chicken, panko bread crumbs, 2 tablespoons chives, garlic, and egg. Season mixture with salt and pepper, then form into small balls about the size of golf balls.
Make sauce: In a medium bowl, whisk together hot sauce, brown sugar, and apple cider vinegar. Season with salt and red pepper flakes.
In a large skillet over medium heat, heat vegetable oil. Add meatballs in a single layer and cook until seared all over, 3 to 4 minutes per side. Add sauce and bring to simmer. Simmer until sauce has thickened slightly and meatballs are cooked through, about 10 minutes.
Garnish with remaining 2 tablespoons chives and serve warm.
Jalapeño Popper Chicken
INGREDIENTS
6 oz. cream cheese, softened
1 c. shredded Cheddar
1/3 c. Sliced green onions
2 cloves garlic, minced
1 jalapeño, minced
kosher salt
Freshly ground black pepper
4 boneless skinless chicken breasts
12 slices bacon
DIRECTIONS
In a large bowl, stir together cream cheese, cheddar, green onions, garlic, and jalapeño and season with salt and pepper.
Make a pocket on the side of each chicken breast, making sure not to slice entirely through the breast. Stuff chicken with cream cheese mixture. Place 3 slices of bacon on a cutting board. Place chicken breast on top and wrap chicken breast in bacon.
Preheat a large cast-iron skillet over medium heat. Add bacon-wrapped chicken and season with more pepper. Cook until bacon is crispy and chicken no longer pink, 10 minutes per side, turning with tongs to make sure to get all sides of the bacon cooked.
