
Here are the 3 easy steps for how to cook pumpkin seeds in 15 minutes or less:
1. Scoop seeds out of the pumpkin and straight into a 1 cup measuring cup. Make sure they are fairly clean of pumpkin.
2. Add oil in measuring cup and mix with hands: 1 teaspoon to 1 cup seeds.
3. Transfer to a parchment-paper lined (or greased) baking sheet, sprinkle with kosher salt and roast for about 15 minutes in a preheated 400 degree oven.
